Apple Pie
Prize winning recipe from New England shows how to make the all-American pie.

The apple pie state champions of the six New England states met at Worcester, Massachusetts, January 5, 1939, to compete for New England honors. First prize went to Connecticut; second to New Hampshire and third to Main. This is the prize winner's recipe.

Crust

  • 2/3 cup shortening
  • 2 cups flour
  • 1 1/2 teaspoons salt
  • 1/4 cup cold water
  • 2 tablespoons heavy cream

Mix flour and salt in a large mixing bowl. Cut in shortening with a fork, leaving a few lumps the size of a pea. Add water gradually working it in with the fork. Shape dough into a ball with hands and divide into two parts for upper and lower crust. Roll out first crust on slightly floured surface and form in pie pan. Roll out second crust and wait for filling.

Filling

  • 6 Granny Smith apples
  • 1 cup sugar
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 2 tablespoons butter
  • pinch of salt

Pare, core and slice apples. Layer apple slices flat in pie pan and pour sugar over them; dust with nutmeg, cinnamon and salt.

Moisten edges of crust and put top crust in place. Press and crimp edges. Gloss crust with cream and bake in 450 F. oven for 20 minutes. Reduce heat to 350 F. and bake 30 minutes longer.
