Frittata
Whipped eggs, cheese, jalapenos, onions, red peppers, and sausage baked in the oven and served with a hot tomato-cream sauce.

Ingredients

  • 4 hot Italian sausages
  • 18 large eggs, beaten
  • 1/2 cup whole milk
  • salt and pepper, to taste
  • 1 medium red bell pepper, chopped
  • 1 medium onion, frenched
  • 4 medium jalapeno peppers, seeded and chopped
  • 12 ounces monterey jack cheese, shredded
  • 1/2 cup finely chopped cilantro
  • Hot Tomato Bechamel

Directions

Slit casings on sausages, then crumble and brown in a heavy skillet; drain and Set aside.

Add eggs and milk to a large bowl and salt and pepper to taste; whip mixture until frothy. Melt butter in 12 inch, oven safe, non-stick skillet over medium high heat. Add bell peppers, onions and jalapenos, and saute for 5 minutes. Distribute sausage and top with cheese. Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with cilantro, place pan in oven and broil for 3 to 4 minutes, or until lightly browned and fluffy.

Before serving, center a large plate or platter over pan and quickly (and smoothly) flip 180 degrees so pan is now on top. Remove pan and serve immediately.
