Italian Breakfast
Hearty breakfast of Italian sausage with eggs in French bread smothered in spaghetti sauce.

Ingredients

  • 2 Italian sausage links, Hot or spicy
  • 1/2 cup spaghetti sauce
  • 2 tablespoons butter
  • 4 French bread slices, 1 inch thick
  • 4 large eggs
  • 2 tablespoons parmesan cheese

Directions

Cook the sausage using about 1/4 inch of water in the bottom of a pan and cover. Fry the sausage when the water is gone until browned. Heat the spaghetti sauce, then reduce heat and cover to keep warm until serving.

Melt 1 tablespoon of butter in frying pan over medium heat. Cut a 2 inch hole in each slice of bread and butter one side. Put 2 slices of bread into the frying pan butter side up. Crack 1 egg carefully into the hole in each slice of bread and cook for about two minutes.

Flip bread and eggs over to butter side for another minute. Add more butter if needed.

Serve with one sausage link and pour some spaghetti sauce over the eggs. Sprinkle with parmesan cheese.
