Italian Meatballs
Classic Italian meatballs of ground veal and pork for traditional spaghetti sauce.

Ingredients

  • 1 pound ground veal (or beef)
  • 1 pound ground pork
  • 1 medium onion, chopped fine
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh parsley
  • 1/2 cup grated parmesean cheese
  • 1/2 cup seasoned breadcrumbs (or crushed croutons)
  • salt & pepper, to taste
  • 2 tablespoons extra-virgin olive oil

Directions

Combine all ingredients except olive oil in a large bowl and using clean hands mix until thoroughly incorporated. Roll between hands into 2" balls and set aside

In a large saute pan (or skillet), over medium heat, brown meatballs in 2 tablespoons of olive oil. Place finished meatballs on a plate with paper towels to cool and drain. Add to spaghetti sauce.
