Salsa Fresca (Fresh Salsa)
Spicy salsa made with red-ripe tomatoes, onions, serrano peppers and cilantro.

Ingredients

  • 6 medium tomatoes, seeded and diced
  • 1/2 medium onion, diced
  • 2-3 serano peppers, chopped fine
  • 3 cloves garlic, minced
  • 1/2 cup finely chopped cilantro
  • 2 tablespoons vinegar
  • 1 teaspoon salt

Directions

Mix all ingredients in a non-reactive bowl and refrigerate for at least 1 hour to marry flavors. For a pureed version add to food processor or blender and process until desired consistancy is reached.

Yields 4 cups
