Salsa Rapido (Quick Salsa)
Quick and easy salsa using canned diced tomatoes and chile peppers with onions and cilantro.

For this recipe I set out to create a salsa that could be thrown together with a minimum of prep work. The Ro-Tel tomatoes were a no-brainer and I was able to find chopped onions in the frozen section of the supermarket. The only fresh ingredient that needs to be prepped is the chopped cliantro. I tried an herb blend with cilantro squeezed from a tube but it just didn't cut it. I guess there is just no subtitute for fresh herbs. For a little fresher taste you can substitute fresh onions for the frozen kind and 6 cloves of garlic, minced fine, for the garlic from a jar. It's really the Ro-Tel tomatoes that makes this salsa, and If you like it hotter add a fresh diced jalapeno.

Ingredients

  • 4 (15 oz.) cans Ro-Tel tomatoes, undrained
  • 1 cup chopped onions
  • 1 tablespoon minced garlic
  • 2 tablespoons vinegar
  • 1/2 cup finely chopped cilantro
  • 1 teaspoon salt

Directions

Mix all ingredients in a non-reactive bowl and refrigerate for at least 1 hour to marry flavors. For a pureed version add to food processor or blender and process until desired consistancy is reached.

Yields 4 cups
