Salsa Verde (Green Sauce)
Green chile salsa made with tomatillos, jalapenos, garlic and cilantro.

Use this recipe to make Chili Verde (green chili), a wonderfully different kind of chili using pork. Or simply use it as a dip with homemade tortilla chips.

Ingredients

  • 1 pound tomatillos, cut in halves
  • 1/2 medium onion, coarsely chopped
  • 3 whole cloves garlic, peeled
  • 1 cup fresh cilantro leaves
  • 3 whole jalapeno chile peppers, seeded
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 cup water

Directions

In a blender or food processor, add tomatillos, onion, garlic, cilantro, jalapenos, salt and pepper and water. Process until completely pureed.

In a small saucepan over medium heat, add tomatillo mixture and simmer for 30 minutes.

Yields 6 cups
