Spicy Meat Loaf
A spicy loaf of ground beef, cheddar cheese, hot sauce, and fresh vegetables, herbs and spices.

In my opinion the cilantro makes this meat loaf. Of course you can experiment with all kinds of stuff and it usually still works.

Ingredients

  • 2 pounds lean ground beef
  • 1 cup seasoned bread crumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (8 oz.) can tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 2 large eggs
  • 1 1/2 teaspoons hot pepper sauce, to taste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 cup fresh chopped cilantro
  • 3/4 cup shredded cheddar cheese
  • Hot Tomato Bechamel

Directions

Combine all ingredients in a large mixing bowl. Fill a oaf pan with the mixture, then turn it out onto a sheet pan, shaping it by hand. Place the meat loaf in a preheated 350 degree oven for 40 minutes or until the internal temperature reaches 155 degrees.

Allow to cool slightly before removing from pan and cutting into slices. Serve with Hot Tomato Bechamel sauce on the side.
