Veggie Alfredo
Italian style vegetables in alfredo sauce over fettuccine noodles.

Ingredients

  • 1 pound fettuccine
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups half and half, or whole milk
  • 1 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • salt and pepper, to taste
  • 1 (16 oz.) package frozen Italian vegetables or fresh broccoli and califlower

Directions

Start cooking fettuccine according to package directions. Meanwhile,in a 2 qt. sauce pan start a rue by melting the butter then adding the flour and stirring until blended and bubbly. Blend cheese into mixture and continue to stir. Add cream, garlic, salt and pepper. Add vegetables and bring to a boil. Simmer for 20 minutes, Stirring often.

Ladle over cooked fettuccine
